Show custom config options in Email template

Using {$service_config_options_html} Currently shows the following in the email: 

Number of files: 20 x Files $0.00 USD

Is there any way I can show only this in the email:

Number of files: 20

using {$service_config_options_html} or something else in the email template?

you could expand that with other currencies if required...
