Why would invoices not merge?

Placed order for customer for product A - option set to create invoice

Placed another order for same customer for Product B - option set to create invoice

 

Now I have two invoices! I thought system was supposed to add to existing invoice if order placed on the same day? is there some option I'm missing?

You would have needed to add both orders without invoicing, and then generate due invoices after both orders were placed. It won't add items to an existing invoice when a new order is placed.
