"None" for server

When removing a server from the list after upgrading to a new one and decommissioning the old one, there are often some terminated accounts in the list that prevent removing the server from the server list. From what I've read, it's just a matter of switching the server to "none" from the dropdown on the account/service. If I do that, it immediately switches to the default server instead. It does this in all but the latest version, which I've not installed.

 

Is "none" something that needs to be defined for this to function properly (which would add a new server "none" to the list, defeating the purpose)?
