A second question.

 

I would always put the prices in the main currency (USD) and when get the others (EUR, GBP) updated using the exchange rates - or - can I choose - putting a few of them in EUR and when getting the USD and GBP updated?

The client would be billed in the currency they choose. You need to define a price in all currencies, you can either manually enter your prices or have WHMCS automatically update them daily based on the exchange rate (Setup > Automation Settings).
