the email templates don't use Language strings like the client area in their content - instead you can create/edit the email templates in multiple languages.

the email styling reflects the header/footer content styling of the templated emails - they won't use language strings, but you might be able to modify existing variables / add variables using hooks, but I can't think of an existing thread where that's ever been detailed.
