view/edit ticket email address

How can we view or edit the email address on a ticket

When we get emails from an address which is is not a client or have to send tickets to an address which is not a client (or using a different address), the client field just shows as BLANK.

We cannot even see the email address the ticket is being sent to, so no way to verify is the email address was mistyped etc.
