Different email template from addresses

I'm trying to configure my email templates and customising the Subject & Body of the emails is no problem. But I don't seem to be able to specify different From name or addresses.

 

I make the changes, click save but when I go back in to the templates, it's reverted back to the default From details.

 

What am I doing wrong or missing?
