Because if they didn't - you would not know what server they wanted the domain pointing to when you first register it. Without setting it to the nameservers of where they host their domain, the domain wouldn't be much use to the client. If you really want default values for the field - ie. you are assuming they are hosting the domain with you - then you can just edit the template files.
