Support department custom field's merge tag in email template

I setup custom fields for a support department (website, due date of request, that kind of thing) and would like that info to be in the email that is sent for the notifications (the "Support Ticket Change Notification" email template, inside the "{if $newTicket}" section).
That way, the tech handling the issue will have all infos on hands (in the email notifying him) without having to consult the ticket itself.

Are there any merge fields for those custom fields in email templates?

Also, is there a way to display the submitter email address in that email?
