Need to run a hook when a product is selected/changed on 'Add New Order' form

I need a hook that runs when a product is selected/changed on 'Add New Order' form. The hooks need to have the following features.

 

1. The Id of the selected client on the form is passed to the hook.

2. Be able to provide options for a Dropdown custom field of the selected product.

 

Please help! Thanks in advance.
