Is there any way to manage/track status of manual delivery of a product?

You could simply use a support ticket to do this. We keep our customers updated throughout the progress of their setup through support ticket. It's as simple as updating the ticket when you have more information, such as server built, OS installing, quick tests etc. Our provider does the same.
