For some reason my invoices that expired go straight to cancelled instead of staying unpaid with added late fee. What adjustment can I make to keep them from cancelling on their due date?

Hi, I'm relatively new here. Been snooping for a while since I took over a reseller service from a partner. I'm looking to clean up the ordering process a bit and I'm wondering if there is a way to have a single product listed in the store with month, quarterly and semi-annually billing cycles available via drop-down menu (default setup) but if its changed from monthly the product is also changed? Example...maybe? Product 1 is chosen. Drop down menu is used and quarterly is selected. Product 1 has now changed to Product 2. & continuing if semi-annually is selected then Product 1 becomes Product 3.
