Changing onclick in Modern Order Form

Hello,

 

I am trying to keep the onclick always open in the modern order form, I would like it that it shows the other categories as always viewable and you do not have to click "Choose Categories" to view the others.

 

Is this possible, not great at writing script but if I can be pointed in the right direction that would be great.

 

Any help would be greatly appreciated.
