new customfields values not being sent down

I have some custom fields on a product. as admin when viewing a customer's product order, I can edit those custom fields, however when I click on the "Change Package" button to get my $module_ChangePackage() to run, the *old* values for the custom fields are sent down. How do I get the values that the admin just changed them to?

 

Or can I somehow hook into the "save" function with my module? somehow I need to run a function when those custom fields are changed.
