Live Chat or Telephone Needed?

I have read a number of replies talking about having a live chat for support or help, or even a telephone number for clients to call. Is that absolutely necessary? Can someone really not wait for an email response? Will people actually not sign up just because the only way you can contact them is through email?

Very much so. A very large proportion of our customers went with us just because they can talk to someone on the phone.
